  • 1/8 teaspoon black pepper Adjust to taste.
  • 1 teaspoon garlic powder Can substitute with fresh garlic or onion powder.

  • 1 teaspoon butter Melt completely in the pan before adding eggs.

Preparation

  • Heat a non-stick skillet over medium heat for about 1-2 minutes.
  • Add 1 teaspoon of butter to the pan and let it melt completely.
  • In a bowl, combine the eggs, cottage cheese, salt, black pepper, and garlic powder. Stir well until mixed.

Cooking

  • Pour the egg mixture into the skillet after the butter has melted and let it sit undisturbed for about 30 seconds.
  • Using a spatula, gently push the eggs from the edges to the center, stirring every few seconds until they start to set.
  • Cook until the eggs are softly set but still slightly runny, about 2-3 minutes more.
  • Remove from heat and serve immediately.

Notes

Customize with various herbs or veggies, serve with whole-grain toast or fruit.
