  • 2 tablespoons olive oil Extra virgin preferred. Can substitute with melted butter or avocado oil.
  • salt and pepper to taste Can substitute with garlic powder or smoked paprika.
  • fresh parsley for garnish Can substitute with other fresh herbs like chives or cilantro.

Preparation and Roasting

  • Preheat your oven to 400°F (200°C).
  • Wash and halve the baby potatoes and place in a mixing bowl.
  • Add chopped bacon to the bowl, ensuring even distribution.
  • Drizzle honey and olive oil over the potato and bacon mixture, and mix well to coat.
  • Sprinkle salt and pepper over the mixture and toss again to distribute evenly.
  • Transfer the mixture to a baking sheet in a single layer and roast for about 25 minutes, turning halfway.
  • Check for doneness after 25 minutes; if necessary, roast for an additional 5 minutes for crispy bacon.
  • Remove from oven and garnish with chopped fresh parsley before serving.

Notes

Serve warm and enjoy with grilled chicken or steak. Experiment with spices or add other vegetables for variety.
