  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika

Instructions
 

Cooking the Rice

  • In a medium pot, bring the chicken broth to a boil. Add the rice, cover, and reduce to low heat. Cook for about 15-20 minutes, or until the rice is tender.

Preparing the Chicken

  • While the rice cooks, heat a bit of oil in a large skillet over medium heat. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • In the skillet, add the chicken thighs and cook for 6-7 minutes on each side, until golden brown and cooked through. Remove chicken and set aside.
  • In the same skillet, lower the heat and add BBQ sauce and honey. Stir well and let simmer for 2-3 minutes.
  • Return the chicken to the skillet, ensuring it gets evenly coated in the sauce.

Serving the Dish

  • Fluff the cooked rice and mix in any optional vegetables if using. Serve chicken over the rice, drizzling extra sauce on top.
  • Garnish with chopped green onions for a pop of color.

Notes

To enhance flavor, marinate chicken in BBQ sauce for an hour before cooking. Customize with favorite vegetables like bell peppers or corn. Serve with a sprinkle of sesame seeds for additional crunch and flavor.
