Preparation

  • Begin by slicing the kielbasa and chopping the vegetables. Make sure all pieces are uniform in size for even cooking.

Cooking

  • Heat a large pan over medium heat and add the olive oil. Once hot, add the sliced kielbasa. Cook for about 5 minutes or until nicely browned.
  • Stir in the minced garlic and honey. Cook for 1-2 minutes until fragrant, being careful not to burn the garlic.
  • Add the bell peppers, baby carrots, and potatoes to the pan. Pour the soy sauce over everything. Stir well and cook for about 15 minutes, stirring occasionally.
  • Ensure the vegetables are cooked through by piercing the potatoes with a fork; they should be tender. If needed, cover the pan for 3-5 more minutes.
  • Once done, remove from heat and sprinkle with fresh parsley or green onions.
  • Serve warm and enjoy!

Notes

Customize vegetables based on what's in season. This dish is excellent for meal prep, providing delicious leftovers. For a kick, add red pepper flakes while cooking.
