Ingredients
  

For the Shrimp

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 2 teaspoons ginger, minced
  • 1 tablespoon olive oil

For Serving

  • 1 cup cooked rice or quinoa
  • 1 cup mixed vegetables (bell peppers, broccoli, snap peas)
  • to taste Green onions, for garnish
  • to taste Sesame seeds, for garnish

Instructions
 

Preparation

  • In a bowl, whisk together honey, soy sauce, garlic, and ginger.

Cooking

  • Heat olive oil in a pan over medium heat.
  • Add shrimp and cook for 2-3 minutes until they start to turn pink.
  • Pour the honey garlic mixture over the shrimp and cook until shrimp are fully cooked, about another 2-3 minutes.
  • In another pan, stir-fry the mixed vegetables until tender.
  • Serve the shrimp over cooked rice or quinoa, topped with stir-fried vegetables.
  • Garnish with green onions and sesame seeds.

Notes

For a zesty kick, add a splash of lime juice. Customize by substituting shrimp with chicken, tofu, or your favorite protein.
