Ingredients
  

Cupcake Batter

  • 1 cup All-Purpose Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 cup Unsalted Butter Softened
  • 1/2 cup Honey Pure honey for sweetness
  • 1/2 cup Granulated Sugar
  • 2 large Eggs
  • 1 tsp Vanilla Extract
  • 1/2 cup Buttermilk
  • 1 cup Peaches Fresh or canned, chopped

Cream Cheese Frosting

  • 8 oz Cream Cheese Softened
  • 1/4 cup Powdered Sugar
  • 2 slices Fresh Peach Slices For garnish
  • 1 tbsp Extra Honey Optional drizzle on top

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a bowl, mix together the flour, baking powder, baking soda, and salt. Set aside.
  • In another bowl, cream together the butter, honey, and granulated sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  • Mix in the buttermilk and chopped peaches until just combined.
  • Gradually add the flour mixture and stir until the batter is smooth.

Baking

  • Spoon the batter into the cupcake liners, filling each about two-thirds full.
  • Bake for 25-30 minutes or until a toothpick inserted comes out clean.

Frosting

  • While cooling, whip the cream cheese with powdered sugar until smooth.
  • Once cupcakes are cool, frost them with the cream cheese mixture and top with peach slices and a drizzle of honey if desired.

Notes

Enhance flavor by adding spices or nuts. Customize by using different fruits or adding chocolate chips.
