  • 4 medium Sweet Potatoes Choose firm, unblemished potatoes. Alternatively, butternut squash can be used.
  • 2 tablespoons Extra Virgin Olive Oil Can substitute with avocado oil.
  • 3 tablespoons Butter Melted. Can substitute with dairy-free butter or coconut oil.
  • 1 tablespoon Lemon Juice Use fresh lemon. Lime juice can also work.
  • 1 teaspoon Lemon Zest Grate zest from a fresh lemon.
  • 3 tablespoons Honey Pure honey recommended. Maple syrup can be a sweeter alternative.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and chop the sweet potatoes into equal-sized pieces, about one-inch thick.
  • In a large bowl, combine the chopped sweet potatoes, olive oil, melted butter, lemon juice, lemon zest, and honey. Toss until well coated.

Cooking

  • Spread the sweet potato mixture evenly on a baking sheet lined with parchment paper.
  • Roast in the oven for about 35 minutes, stirring halfway through.
  • Check for doneness; they should be golden brown and tender when pierced with a fork. If desired, roast for a few more minutes for a crispier texture.
  • Let them cool for a minute before serving. Drizzle with additional honey if desired.

Notes

Enhance flavors with a pinch of cinnamon or nutmeg. You can add carrots or Brussels sprouts for variety.
