  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14.5 ounces)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion, carrots, and celery. Cook until soft, about 5-7 minutes.
  • Stir in the minced garlic and cook for an additional minute.
  • Pour in the vegetable broth and add the diced tomatoes, oregano, and basil.
  • Season with salt and pepper to taste.
  • Bring the soup to a boil, then reduce heat and let it simmer for 20 minutes.
  • Add the leafy greens and lemon juice just before serving.
  • Serve hot and enjoy!

Notes

Garnish with fresh herbs or a sprinkle of parmesan cheese. Pair it with crusty bread or a fresh salad for a complete meal.
