  • 2 tablespoons olive oil
  • 1 medium onion (diced)
  • 3 cloves minced garlic
  • 2 diced jalapeños
  • 1 pound boneless skinless chicken breasts Diced into bite-sized pieces.
  • 4 cups low-sodium chicken broth Use low-sodium to control saltiness.
  • 1 cup heavy cream
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 4 ounces softened cream cheese Soften before mixing to avoid clumping.
  • 1 cup shredded cheddar cheese Reserve some for topping.
  • ½ cup crumbled bacon (optional)
  • fresh cilantro for garnish

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat. Add diced onion and sauté for about 3-4 minutes until softened.
  • Stir in minced garlic and diced jalapeños, and sauté for another 2 minutes.
  • Add diced chicken breasts to the pot and cook for about 5-7 minutes until the chicken is no longer pink.
  • Add low-sodium chicken broth to the pot. Raise the heat to high and bring to a boil.
  • Stir in ground cumin and smoked paprika. Reduce heat to low and let it simmer for about 15 minutes.
  • Mix in heavy cream and softened cream cheese until creamy and smooth.
  • Just before serving, sprinkle with shredded cheddar cheese and crumbled bacon, and garnish with fresh cilantro.

Notes

Customize spice levels by adjusting jalapeños and adding hot sauce. Serve with avocado slices for added creaminess.
