Ingredients

  • 8 oz corned beef, sliced
  • 1 cup sauerkraut, drained
  • 8 oz Swiss cheese, shredded
  • 1/2 cup cream cheese, softened
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix the cream cheese, Dijon mustard, salt, and pepper until smooth.
  • Lay out the slices of corned beef on a flat surface.
  • Spread a thin layer of the cream cheese mixture over the corned beef.
  • Place a small amount of sauerkraut and Swiss cheese on each slice.
  • Carefully roll up the corned beef slices tightly.
  • Brush the outside of each roll with olive oil.

Cooking

  • Place the roll-ups on a baking sheet lined with parchment paper.
  • Bake for 12-15 minutes or until golden and crispy.
  • Garnish with fresh parsley if desired before serving.

Notes

For added flavor, mix in chopped green onions or dill into the cream cheese. Customize by using different types of cheese or deli meats. Serve with a side of pickles for an extra tangy crunch.
