  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup lemon juice
  • 1 zest of 1 lemon

Frosting Ingredients

  • 2 cups powdered sugar
  • 2 tablespoons lemon juice (for frosting)
  • 1 zest for garnish

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the eggs and vanilla extract until combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with lemon juice, until fully incorporated.
  • Fold in the lemon zest.

Baking

  • Drop tablespoon-sized balls of dough onto ungreased baking sheets.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Frosting

  • Mix powdered sugar and lemon juice until smooth.
  • Spread the frosting over the cooled cookies and garnish with extra lemon zest.

Notes

For a richer frosting, add a dash of vanilla extract. Try using different citrus zests for a unique twist.
