  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 4 cups chicken broth Use low-sodium if preferred.
  • 1 can (14.5 oz) diced tomatoes Canned tomatoes for convenience.
  • 1 cup heavy cream Adds creaminess to the soup.
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach Add at the end to wilt.
  • Salt and pepper to taste

Preparation

  • In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned (about 5-7 minutes). Remove from pot and set aside.
  • In the same pot, add onion, garlic, carrots, and celery. Sauté until vegetables are soft (about 5 minutes).
  • Pour in chicken broth and diced tomatoes. Bring to a boil (about 5 minutes).
  • Add heavy cream and Italian seasoning, stirring to combine.
  • Return the chicken to the pot and let the soup simmer for about 20 minutes.
  • Stir in fresh spinach until wilted. Season with salt and pepper.

Serving

  • Ladle the soup into bowls, topping with freshly grated Parmesan for an extra touch.
  • Serve with warm, crusty bread or a fresh salad for a complete meal.

Notes
