  • 1 pound Chicken breasts Cut into bite-sized pieces
  • 2 tablespoons Extra virgin olive oil For cooking
  • 1 medium Zucchini Chopped
  • 1 large Red bell pepper Chopped
  • 1 medium Red onion Chopped
  • 1 cup Cherry tomatoes Halved
  • 1/2 cup Kalamata olives Pitted and sliced
  • 2 cloves Garlic Minced
  • 1/4 cup Sun-dried tomatoes
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried thyme
  • 2 tablespoons Lemon juice
  • 1/2 cup Feta cheese Crumbled
  • 1/4 cup Fresh parsley Chopped

Preparation

  • Start by cutting the chicken breasts into bite-sized pieces.

Cooking

  • Heat olive oil in a large pan over medium heat. Add the chicken and cook until browned, about 5-7 minutes.
  • While the chicken cooks, chop the zucchini, red bell pepper, and red onion.
  • Add the chopped vegetables to the pan and stir-fry for 5 minutes until slightly tender.
  • Mince the garlic and add it to the pan along with the Kalamata olives, sun-dried tomatoes, oregano, basil, thyme, and lemon juice. Mix well and cook for another 5 minutes.
  • Remove from the heat and stir in the feta cheese and fresh parsley before serving.

Notes

For flavor enhancement, add a pinch of red pepper flakes for heat. Customize by swapping in seasonal vegetables like asparagus or eggplant. For serving, consider adding fresh lemon wedges for extra zing.
