Mediterranean Quesadillas

  • 2 cups Fresh Spinach, chopped Avoid using wilted spinach.
  • 1 cup Feta Cheese, crumbled Store leftover feta in the refrigerator.
  • 1 cup Mozzarella Cheese, shredded Use low-moisture mozzarella for best melt.
  • 1 medium Red Onion, thinly sliced Use raw for sharp bite or sauté for sweetness.
  • 4 large Flour Tortillas Choose fresh tortillas to avoid breakage.
  • 2 tablespoons Olive Oil Brush on the quesadilla for a crispy finish.
  • to taste Salt Adjust according to personal preference.
  • to taste Pepper Freshly cracked for bolder flavor.

Preparation

  • Heat olive oil in a skillet over medium heat. Add the chopped spinach and sliced red onions, sauté for about 3-4 minutes until the spinach wilts and onions soften.
  • Remove the skillet from heat and stir in the crumbled feta and shredded mozzarella until well combined.

Assembly and Cooking

  • Lay one tortilla flat and spoon a generous amount of the spinach and cheese mixture onto one half. Fold the tortilla over.
  • In the skillet, add a little more olive oil and cook the folded quesadilla for 3-4 minutes on each side until golden brown and crispy, pressing gently with a spatula.
  • Remove from skillet and let rest for a minute before slicing into wedges for serving.

Notes

Serve on a colorful platter with salsa or tzatziki. One quesadilla usually serves two, but make extras for guests.
