Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together flour, baking soda, and salt.
  • In a larger bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in eggs one at a time, then mix in peppermint and vanilla extracts.
  • Gradually stir in the flour mixture until just combined.
  • Fold in chocolate chips and optional green food coloring.
  • Drop spoonfuls of dough onto lined baking sheets.
  • Bake for 12-15 minutes or until edges are golden.

Notes

Keep cookies in an airtight container at room temperature for up to one week. They can be frozen for up to two months.
