Ingredients
  

For the crust

  • 1 cup Graham cracker crumbs Crushed. Gluten-free crackers can be used as a substitute.
  • 1/2 cup Unsalted butter Melted. Coconut oil can be used as a healthier option.

For the filling

  • 8 oz Cream cheese Softened at room temperature for easy mixing.
  • 1/2 cup Powdered sugar Can substitute with honey or maple syrup for natural sweetness.
  • 1 tbsp Lemon juice Freshly squeezed or bottled. Lime juice can be used for a zesty twist.
  • 2 cups Fresh blueberries Rinse and dry. Frozen blueberries can be used, but may release more juice.

Preparation

  • Mix graham cracker crumbs and melted butter in a bowl. Press mixture firmly into the bottom of the pan to create an even crust.
  • In a separate bowl, beat softened cream cheese until smooth. Gradually add powdered sugar and lemon juice, mixing until smooth.
  • Spread the cream cheese mixture evenly over the crust.
  • Top the cream cheese layer with fresh blueberries, ensuring they are evenly distributed.
  • Cover the dessert with plastic wrap and chill in the fridge for at least 2 hours.
  • Once chilled, slice into squares or rectangles and serve cold.

Notes

Experiment with different fresh fruits like strawberries or raspberries. Add a sprinkle of cinnamon to the cream cheese mixture for extra warmth. Garnish with a dollop of whipped cream or an extra lemon slice.
