  • 1 lb Kielbasa, sliced into half-moon pieces Can substitute with chicken sausage or turkey kielbasa.
  • 1 lb Baby potatoes, halved Use red or yellow baby potatoes for color.
  • 1 cup Bell peppers, chopped (red and yellow) Fresh peppers recommended for better flavor.
  • 1 cup Baby carrots, halved Can substitute with regular carrots sliced into coins.
  • 1/4 cup Honey Use pure honey for the best flavor.
  • 1/4 cup Soy sauce Use low-sodium soy sauce to reduce salt content.
  • 3 cloves Garlic, minced Fresh garlic is recommended for best flavor.
  • 2 tbsp Olive oil Extra virgin olive oil is preferred.
  • 1/4 cup Fresh parsley or green onions, chopped For garnish.

Preparation

  • Wash and cut all vegetables: halve the baby potatoes, chop the bell peppers, and slice the kielbasa.

Cooking

  • Heat a large skillet over medium heat with two tablespoons of olive oil for about 2 minutes until shimmering.
  • Add the sliced kielbasa to the pan and cook for about 5 minutes, or until it starts to brown.
  • Stir in the baby potatoes, bell peppers, and baby carrots, cooking for another 5-7 minutes, or until they begin to soften.
  • In a small bowl, mix honey and soy sauce with minced garlic, then pour this mixture over the pan.
  • Stir well to coat everything evenly and let it bubble for about 3-5 minutes.
  • Check for doneness: potatoes should be fork-tender, and kielbasa heated through.
  • Remove from heat and sprinkle with fresh parsley or green onions before serving.

Notes

For enhanced flavor, consider adding your favorite spices like paprika or thyme. Customize the recipe with seasonal vegetables to suit your taste.
