  • 2 tablespoons olive oil
  • 2 large boneless, skinless chicken breasts, diced
  • to taste Salt and freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 2 cups penne pasta (uncooked)
  • 1.5 cups water or chicken broth
  • ¾ cup BBQ sauce (preferably smoky variety)
  • 2 tablespoons honey
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • to taste Optional: chopped parsley or green onion for garnish

Preparation

  • Heat the olive oil in a large pan over medium heat.
  • Season the diced chicken breasts with salt, pepper, and smoked paprika.
  • Add the chicken to the pan and cook until golden brown, about 5-7 minutes.

Cooking

  • Stir in the penne pasta, water or chicken broth, BBQ sauce, honey, Worcestershire sauce, and garlic powder.
  • Bring to a boil, then reduce the heat to low and cover the pan.
  • Let it simmer for 12-15 minutes, stirring occasionally, until the pasta is tender and the sauce thickens.
  • Remove from heat and garnish with parsley or green onion, if desired.

Notes

Add a splash of lemon juice for added brightness. Customize the dish by swapping chicken for shrimp or veggies. Serve with extra BBQ sauce on the side for dipping!
