  • 1 pound ground beef or turkey Choose either ground beef or turkey based on preference.
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth Use low-sodium broth if desired.
  • 1 can diced tomatoes (14.5 oz) Canned tomatoes can be seasoned or unseasoned.
  • 8 ounces lasagna noodles, broken into pieces Regular or whole wheat lasagna noodles can be used.
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese For topping.
  • Fresh basil for garnish Chopped or whole leaves for serving.

Preparation

  • In a large pot, brown the ground beef or turkey over medium heat, stirring until cooked through (about 5-7 minutes).
  • Add the chopped onion and minced garlic; sauté until translucent (about 3 minutes).
  • Pour in the beef broth and add the diced tomatoes, stirring to combine.
  • Add the broken lasagna noodles and Italian seasoning. Season with salt and pepper. Cook for about 20 minutes until noodles are tender.
  • Once cooked, remove from heat and stir in the ricotta cheese until creamy.
  • Serve in bowls, topped with mozzarella cheese and fresh basil for garnish.

Notes

Serve with crusty bread or a fresh salad. Ideal for sharing or enjoying leftovers. Pair with a glass of red wine for an enhanced experience.
