Paleo Sweet Potato Shepherd’s Pie

Ingredients
  

Main Protein

  • 1 pound ground lamb or beef Can substitute with ground turkey or chicken.

Starch

  • 2 large sweet potatoes Peeled and cubed.

Seasoning

  • 1 teaspoon dried thyme Toast briefly for enhanced aroma.
  • 1 teaspoon dried rosemary Can substitute with Italian seasoning.

Liquids

  • 1/2 cup beef broth Low-sodium recommended.

Aromatics & Vegetables

  • 1 medium onion Chopped.
  • 2 chopped carrots
  • 2 chopped celery stalks
  • 2 minced garlic cloves

Optional Ingredients

  • 2 tablespoons coconut milk Adjust for desired creaminess.
  • 1 tablespoon ghee or coconut oil Can substitute with butter.

Instructions
 

Preparation

  • Heat 1 tablespoon of olive oil in a large pan over medium heat.
  • Add the chopped onion, carrots, celery, and minced garlic. Sauté until softened, about 5-7 minutes.
  • Push the vegetables to one side of the pan and add the ground lamb or beef. Cook until browned, about 8-10 minutes. Stir everything together.
  • Stir in dried thyme, dried rosemary, salt, and pepper to taste. Pour in beef broth and stir in tomato paste. Simmer for 5 minutes.
  • Boil salted water and add cubed sweet potatoes. Cook until fork-tender, about 15-20 minutes. Drain well.
  • Return the sweet potatoes to the pot, add coconut milk and ghee. Mash until smooth and creamy, seasoning with salt and pepper.
  • Spread the meat filling evenly in a baking dish and top with the creamy sweet potato mash. Smooth it out.

Baking

  • Preheat your oven to 400°F (200°C). Bake for about 20 minutes or until the edges are bubbly and the top is slightly golden.

Notes

Serve in shallow bowls for a cozy look. Pair with a fresh garden salad and enjoy with a crisp white wine or sparkling water.
