Preparation

  • In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  • In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Cooking

  • Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  • Drop spoonfuls of the batter onto the skillet, creating small round shapes.
  • Cook for about 2-3 minutes until bubbles form on the surface, then flip and cook for an additional 2-3 minutes until golden brown.
  • Repeat until all batter is cooked, adjusting heat as needed.

Notes

For a beautiful finish, stack the poppers on a plate and dust with powdered sugar. Serve with maple syrup or fresh fruit. They can also be customized with mix-ins like chocolate chips or nuts.
