  • 1 pound beef steak, thinly sliced Lean beef works best
  • 1 medium diced onion
  • 1 medium thinly sliced green bell pepper
  • 2 cloves minced garlic
  • 6 cups beef broth Low sodium recommended
  • 1 cup heavy cream Can be substituted with low-fat cream for a lighter version
  • 1 cup provolone cheese, shredded Can substitute with other cheeses if desired
  • 6 slices bacon, cooked and crumbled Crispy texture enhances flavor
  • to taste salt and pepper Adjust according to preference

For Toast

  • 6 slices bread Any type of bread can work
  • to taste butter For toasting

Instructions
 

Preparation

  • In a large pot, cook the bacon over medium heat until crispy, then remove and set aside.
  • In the same pot, add the diced onion and green bell pepper, sautéing until softened.
  • Add the minced garlic and sliced beef steak, cooking until the beef is browned.

Cooking

  • Pour in the beef broth and bring to a simmer.
  • Stir in the heavy cream, followed by the shredded provolone cheese, mixing until melted and creamy.
  • Season with salt and pepper to taste, and stir in the crumbled bacon.
  • While the soup simmers, butter the bread slices and toast them.
  • Serve the soup hot with cheesy toast on the side.

Notes

Enhance flavor with Worcestershire sauce or customize with different proteins or veggies. Best served immediately.
