  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin for flavor
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha for heat
  • 4 cups coleslaw mix for crunch and flavor

Cooking Steps

  • Heat peanut oil in a large skillet over medium heat.
  • Add the ground pork, cooking until browned and cooked through, about 5-7 minutes.
  • Stir in the minced garlic and grated ginger; cook for another minute.
  • Pour in the chicken broth, mirin, soy sauce, sesame oil, and sriracha. Stir well.
  • Add the coleslaw mix and cook until wilted, about 3-4 minutes.
  • Add cooked Lo Mein noodles, tossing everything to combine, and heat for an additional 2-3 minutes.
  • Top with sliced green onions before serving.

Notes

Enhance flavor with lime juice or cilantro. Customize by adding vegetables like bell peppers or snap peas. Freeze leftovers for up to 2 months.
