Ingredients
  

Bagel Base

  • 4 pieces bagels (plain, whole wheat, or everything)

Filling

  • 2 large eggs
  • 6 tablespoons heavy cream
  • 1/4 cup shredded cheddar cheese
  • 4 slices cooked bacon (chopped)
  • 1/4 cup sautéed spinach or bell peppers
  • Salt and pepper (to taste)
  • Optional: chives for garnish

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice the bagels in half and scoop out a little of the inside to create space for the filling.
  • In a mixing bowl, whisk together the eggs and heavy cream until well combined.
  • Add in the shredded cheddar cheese, chopped bacon, and sautéed vegetables. Season with salt and pepper.
  • Spoon the egg mixture into each bagel half, filling them generously.

Baking

  • Place the stuffed bagels on a baking sheet and bake for 15 minutes or until the filling is set and the tops are slightly golden.
  • Remove from the oven and let them cool slightly before serving. Garnish with chives if desired!
