  • 1/2 teaspoon Black Pepper Freshly cracked preferred.
  • 1 teaspoon Smoked Paprika Adds depth; optional.
  • 1 cup Feta Cheese Can substitute with goat cheese.
  • 2 tablespoons Honey Use pure honey or maple syrup as an alternative.
  • 2 tablespoons Parsley Freshly chopped for garnish.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel your sweet potatoes, then slice them into ½ inch thick rounds.
  • In a large bowl, toss the sweet potato rounds with olive oil, salt, pepper, and smoked paprika until evenly coated.
  • Spread the seasoned sweet potatoes in a single layer on a baking sheet.

Cooking

  • Place the baking sheet in the oven and roast for 20-25 minutes, flipping halfway through for even coloring.
  • Once out of the oven, sprinkle crumbled feta cheese on top and drizzle with honey.
  • Finish with chopped parsley before serving.

Notes

Enhance flavor with chili flakes, or customize with nuts like walnuts or pecans. Serve with yogurt sauce for a cool contrast.
