Ingredients
  

Pasta and vegetables

  • 1 cup orzo pasta
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, sliced

Seasoning and toppings

  • 2 tablespoons olive oil
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Italian seasoning
  • 2 cloves garlic, minced
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons chopped fresh basil
  • Juice of 1 lemon

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Toss the zucchini, red bell pepper, yellow bell pepper, cherry tomatoes, and red onion with olive oil, salt, pepper, and Italian seasoning. Spread on a baking sheet.

Cooking

  • Roast the vegetables in the oven for 20-25 minutes until tender and slightly charred.
  • Meanwhile, cook the orzo according to package instructions. Drain and set aside.

Mixing and Serving

  • Once the vegetables are done, mix them with the cooked orzo, minced garlic, and lemon juice.
  • Stir in crumbled feta cheese and fresh basil just before serving.

Notes

For extra flavor, add a splash of balsamic vinegar. This dish can also be customized with your favorite vegetables or proteins.
