  • 1 can (10 oz) Rotel diced tomatoes and green chilies (undrained) Provides sweet and spicy flavor.
  • 1 cup heavy cream Lends a luscious texture.
  • 1 cup shredded cheddar cheese Creates a gooey sauce.
  • 1 tsp taco seasoning Adds flavor; can substitute with a mix of spices.
  • 1/2 tsp garlic powder Enhances overall flavor.
  • Salt and pepper to taste Adjust according to preference.
  • Fresh cilantro or parsley (optional, for garnish) Adds color and freshness.

Cooking

  • In a large skillet over medium heat, brown the ground beef or turkey for about 5-7 minutes until fully cooked, stirring occasionally.
  • Sprinkle taco seasoning and garlic powder over the cooked meat and mix well. Cook for an additional 1-2 minutes until fragrant.
  • Add the can of Rotel (do not drain) to the skillet. Mix well and let it simmer for 3-4 minutes.
  • Once the Rotel has simmered, pour in the cooked pasta and toss it with the meat mixture for 1-2 minutes.
  • Pour in the heavy cream and stir to coat everything evenly. Cook for an additional 2-3 minutes until heated through and creamy.
  • Stir in the shredded cheddar cheese and allow it to melt, creating a gooey sauce for about 2 minutes.
  • Remove from heat and sprinkle with fresh cilantro or parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze portions for up to 3 months.
