  • 8 oz fresh mushrooms (button or cremini), sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • Salt and pepper to taste
  • 1 tbsp olive oil

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add chopped onions and cook until translucent, about 5 minutes.
  • Stir in minced garlic and sliced mushrooms; sauté until mushrooms are tender, about 7-8 minutes.
  • Pour in the vegetable broth and add shredded chicken and thyme. Bring to a simmer.
  • Reduce heat and stir in heavy cream, then season with salt and pepper to taste.
  • Let the soup simmer for about 10 minutes, allowing flavors to meld together.
  • Serve hot, garnished with fresh herbs if desired.
