  • 1 cup mushrooms, sliced
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon thyme

  • 2 tablespoons olive oil

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add chopped onions, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.
  • Stir in the sliced mushrooms and cook for another 5 minutes.
  • Pour in the chicken broth and bring to a boil.
  • Add the shredded rotisserie chicken and thyme. Season with salt and pepper to taste.
  • Reduce heat and let the soup simmer for 20 minutes.
  • Serve hot, and enjoy!

Notes
