  • 1 medium red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 medium zucchini, sliced into rounds
  • 1 medium eggplant, diced
  • 1 medium red bell pepper, chopped
  • 1 medium yellow bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • to taste Salt and pepper
  • 1 tablespoon balsamic vinegar For drizzling
  • to taste Fresh parsley, chopped (for garnish)

Instructions
 

Cooking

  • Step 1: Heat the olive oil in a large skillet over medium heat.
  • Step 2: Add the sliced red onion and minced garlic, and sauté until the onion softens.
  • Step 3: Stir in the zucchini and eggplant, cooking until tender.
  • Step 4: Add the red and yellow bell peppers, followed by the cherry tomatoes.
  • Step 5: Season with oregano, thyme, basil, salt, and pepper, stirring well.
  • Step 6: Drizzle the balsamic vinegar over the vegetables and sauté for another 2-3 minutes.
  • Step 7: Remove from heat and garnish with fresh parsley before serving.

Notes

Add a splash of lemon juice for brightness. Customize with your favorite seasonal vegetables. Serve warm or at room temperature.
