Ingredients
  

Pasta Salad Base

  • 16 oz 1 box (16 oz) rotini noodles Rotini noodles or any pasta of choice.
  • 2 cups chopped small dill pickles Chop the pickles into small pieces.
  • 8 oz colby jack cheese, diced Diced for easy mixing.
  • 1 small white onion, minced Use a small onion for a milder flavor.

Dressing

  • 1/3 cup brine from dill pickles Add more for extra tangy flavor.
  • 1 cup mayonnaise Can substitute with Greek yogurt for a lighter option.
  • 1/2 cup sour cream Adds creaminess to the dressing.
  • 1/3 cup dill pickle liquid For added flavor.
  • 2 tbsp fresh dill, chopped Or use 1 tbsp of dried dill.
  • 1/4 tsp salt To taste.
  • 1/4 tsp ground black pepper Freshly ground is preferred.

Preparation

  • Cook the rotini noodles according to package instructions, then drain and set aside to cool.
  • In a large mixing bowl, combine the chopped dill pickles, diced colby jack cheese, and minced onion.
  • In a separate bowl, whisk together the dill pickle brine, mayonnaise, sour cream, chopped dill, salt, and pepper.
  • Add the cooled rotini noodles to the large mixing bowl with the other ingredients.
  • Pour the dressing mixture over the salad and stir everything together gently until well combined.
  • Cover and refrigerate for at least 30 minutes for the flavors to meld.

Notes

For extra flavor, try adding a splash of pickle juice to the dressing. Customize by swapping the colby jack cheese for mozzarella or cheddar. Serve it in individual cups for fun portions at a party!
