Ingredients
  

Main Protein

  • 2.5 lbs beef chuck roast, cut into large chunks Trim excess fat before cutting.

Starch/Pasta

  • 2 lbs baby Yukon Gold potatoes, halved Wash and halve the potatoes.

Seasoning/Spice Blend

  • 6 tbsp unsalted butter, melted Melt before adding.
  • 5 cloves garlic, minced Mince garlic before adding.
  • 1 tsp dried Italian herbs Alternatively, fresh herbs can be used.

Liquids/Dairy

  • 1/2 cup low-sodium beef broth Stick with low-sodium options.

Aromatics & Vegetables

  • 1 medium onion, sliced (optional) Sauté briefly to enhance flavor.
  • 1 cup chopped carrots (optional) Chop into bite-sized pieces.

Optional Finishing Ingredients

  • 1/4 cup fresh parsley, chopped Garnish before serving.

Instructions
 

Preparation

  • Season the beef chunks with salt and black pepper.
  • Optionally, sear the beef chunks in a skillet with olive oil for 3-4 minutes.
  • In the slow cooker, layer the halved potatoes, followed by any seared beef.
  • Pour the melted butter over the top.
  • Sprinkle minced garlic and dried herbs over the beef and potatoes.
  • Scatter the sliced onions and chopped carrots if using.
  • Pour beef broth over all the ingredients.
  • Cover the slow cooker and set to low for 8 hours.

Serving

  • Once cooked, mix gently to combine and serve hot, garnished with parsley.

Notes

Consider adding Worcestershire sauce for deeper flavor. Feel free to substitute vegetables as desired.
