Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, cream the softened butter with granulated sugar until light and fluffy, about 3-4 minutes.
  • Beat in the eggs, vanilla extract, and almond extract until well incorporated.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • If using, add gel food coloring until the desired pastel shade is achieved.

Baking

  • Scoop spoonfuls of cookie dough and roll into balls.
  • Roll each ball in powdered sugar to coat.
  • Place cookies on a lined baking sheet, spacing them about 2 inches apart.
  • Bake for 12-15 minutes until edges are set and centers remain soft.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
