Ingredients
  

Macaron Shells

  • 1 cup Almond Flour
  • 1 cup Powdered Sugar Plus additional for dusting
  • 0.5 cup Granulated Sugar
  • 4 large Egg Whites
  • 1 teaspoon Pink Gel Food Color

Filling

  • 2 cups Frozen Strawberries Can use fresh strawberries
  • 8 oz Cream Cheese Room temperature
  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 0.5 cup White Chocolate Melted
  • 0.5 cup Graham Cracker Crumbs

Instructions
 

Preparation

  • Preheat your oven to 300°F (150°C). Line baking sheets with parchment paper.
  • In a bowl, mix almond flour and powdered sugar. Sift to combine.
  • In another bowl, whip egg whites until frothy. Gradually add granulated sugar until glossy peaks form.
  • Fold in the almond mixture gently, adding pink food color as you go.

Baking

  • Pipe small circles onto prepared sheets. Tap softly to release air bubbles.
  • Let them rest for 30 minutes. Bake for 15 minutes, then cool.

Filling Preparation

  • For filling, blend strawberries, cream cheese, powdered sugar, and vanilla until smooth.
  • Melt white chocolate and mix with graham cracker crumbs.

Assembly

  • Spread strawberry mixture on one macaron shell, top with another, and allow to chill.

Notes

Dust with powdered sugar or drizzle with melted chocolate for a fancy touch. Pair with sweet iced tea or coffee.
