Ingredients
  

Main Protein

  • 2 lbs boneless, skinless chicken breasts Cut into pieces if desired.

Fruits & Vegetables

  • 1 cup pineapple chunks Fresh or canned.
  • 1/4 cup sliced green onions For garnish; slice just before serving.
  • 2 cloves minced garlic Enhances flavor depth.
  • 1 teaspoon ground ginger Fresh ginger can be substituted.

Liquids/Dairy

  • 1/2 cup soy sauce Use reduced-sodium if preferred.
  • 1/4 cup brown sugar Adjust sweetness to taste.
  • 1/4 cup ketchup Creates a sweet base for the sauce.

Seasoning

  • 1/2 teaspoon black pepper Measure carefully.

Instructions
 

Preparation

  • Place the chicken breasts in the bottom of your crockpot, evenly distributed for even cooking.
  • Pour in the pineapple chunks, soy sauce, brown sugar, ketchup, minced garlic, ground ginger, and black pepper over the chicken. Stir gently to coat the chicken evenly.

Cooking

  • Cover the crockpot and set it to cook on low for 6 hours.
  • After 6 hours, check that the chicken is fully cooked and can be shredded easily with a fork.
  • Once done, shred the chicken in the sauce with two forks.

Serving

  • Serve the chicken and sauce over rice, garnished with sliced green onions.

Notes

For flavor enhancement, consider marinating the chicken overnight. Customize the sweetness by adjusting the amount of brown sugar based on preference.
