  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, thinly sliced
  • 8 oz mushrooms, sliced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • to taste Salt and black pepper
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream (optional for richer sauce)
  • 1 cup shredded Monterey Jack cheese
  • to taste Fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • Heat the olive oil and butter in a large skillet over medium heat.
  • Add the sliced onions and mushrooms to the skillet, and sauté until they are tender and golden brown, about 5 minutes.
  • Season the chicken breasts with garlic powder, paprika, salt, and pepper.
  • Push the vegetables to the side of the skillet and add the seasoned chicken breasts. Cook for about 6-7 minutes on each side until they are cooked through.
  • Pour in the chicken broth and heavy cream (if using). Let it simmer for a few minutes until the sauce thickens slightly.
  • Sprinkle the shredded Monterey Jack cheese over the chicken and cover the skillet until the cheese melts, about 2-3 minutes.
  • Garnish with chopped parsley before serving.

Notes

Enhance flavor with crushed red pepper for a spicy kick. Customize with different cheeses or vegetables.
