  • 150 g sweet potato, mashed Peeled, chopped, boiled or steamed until soft.
  • 130 g all-purpose flour Can substitute with whole wheat or gluten-free flour.

Preparation

  • Start by washing and peeling the sweet potatoes. Chop them into small cubes.
  • Boil the sweet potatoes in water for about 15-20 minutes or until soft.
  • Drain the boiled sweet potatoes and mash them until smooth. Let them cool slightly.

Making Tortillas

  • In a mixing bowl, combine the mashed sweet potato with all-purpose flour. Stir until a dough forms.
  • Divide the dough into small balls, about the size of a golf ball. Flatten each ball into rounds about 1/4 inch thick.
  • Heat a non-stick skillet over medium heat. Cook each tortilla for 2-3 minutes on each side until golden brown.
  • Stack cooked tortillas in a clean kitchen towel to keep them warm.

Notes

Add spices like cumin or paprika for extra flavor. Customize by adding herbs or green onions.
