  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 tsp Italian seasoning
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • to taste Salt and pepper

  • In a large pot, sauté the chopped onion and minced garlic over medium heat until softened and fragrant.
  • Add the shredded chicken, chicken broth, diced tomatoes, and Italian seasoning. Bring the mixture to a boil.
  • Stir in the broken lasagna noodles. Reduce heat and let simmer for about 20 minutes or until the noodles are tender.
  • Add the heavy cream, mozzarella, and Parmesan cheese. Stir until melted and creamy. Season with salt and pepper to taste.
  • Serve hot, garnished with fresh basil. Enjoy!
