Ingredients
  

For the Salmon Bites

  • 1 lb fresh salmon (skinless and cut into bite-sized cubes) Ensure the salmon is cut evenly for cooking.
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs For a crispier texture, use Japanese-style panko.
  • 1 tbsp olive oil or spray for crisping

For the Bang Bang Sauce

  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha Adjust to your desired spice level.
  • 1 tsp honey (optional) Can be added for extra sweetness.
  • Juice of ½ lime

For Serving

  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 pc avocado (sliced)
  • ½ cup shredded carrots
  • 2 pcs green onions (sliced)
  • To taste Fresh cilantro and sesame seeds for garnish

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) or preheat your air fryer.
  • In a bowl, combine salmon cubes with garlic powder, smoked paprika, salt, and black pepper. Mix well.
  • Dredge the seasoned salmon in panko breadcrumbs until covered evenly.

Cooking

  • Place the salmon bites on a baking sheet or in the air fryer basket, drizzle with olive oil, and cook for about 15-20 minutes until golden brown.

Sauce Preparation

  • Mix mayonnaise, sweet chili sauce, sriracha, optional honey, and lime juice until smooth.

Assembly

  • Serve salmon bites over jasmine rice, topped with purple cabbage, avocado, carrots, and green onions.
  • Drizzle with Bang Bang sauce and garnish with cilantro and sesame seeds.

Notes

For best results, serve immediately for a crispy texture. Leftovers can be stored in the refrigerator for up to 3 days.
