  • 1 lb steak (sirloin or ribeye) Cut into bite-sized pieces.
  • 20 oz cheese tortellini Fresh or refrigerated varieties recommended.
  • 1 cup heavy cream For a rich sauce.
  • 3/4 cup whole milk To combine with heavy cream.
  • 1 1/4 cups parmesan cheese Shredded or freshly grated.

Seasonings

  • 2 tbsp olive oil For searing the steak.
  • 4 tbsp butter Used for sautéing garlic.
  • 5 cloves garlic Minced for flavor.
  • 1 teaspoon salt To season steak.
  • 1 teaspoon black pepper To season steak.
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

Instructions
 

Preparation

  • Start by heating 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the seasoned steak pieces and sear for 3-4 minutes until browned on all sides.
  • Remove the seared steak from the skillet and let it rest on a plate.
  • In the same skillet, reduce the heat to medium and add 4 tablespoons of butter to melt. Then, stir in the minced garlic and sauté for about 1 minute until fragrant.
  • Pour in 1 cup of heavy cream and 3/4 cup of whole milk, stirring well. Let simmer for 2-3 minutes.
  • Gradually mix in 1 1/4 cups of parmesan cheese, stirring constantly until melted.
  • Add the cheese tortellini and stir to coat evenly with the sauce, cooking for 2-3 minutes until heated through.
  • Return the seared steak to the skillet and mix gently. Allow everything to heat together for another minute.

Serving

  • Plate the tortellini and steak mixture in wide, shallow bowls. Garnish with fresh parsley and cracked black pepper if desired.

Notes

For flavor enhancement, add a splash of white wine during the sauce-making. Customize with vegetables like spinach or sun-dried tomatoes.
