Wet Ingredients

  • 1 cup Kefir Adds moisture and tang, helps tenderize the cake.
  • 2 large Eggs Bind ingredients and add texture.
  • ½ cup Butter or Oil Adds moisture and flavor.

Dry Ingredients

  • 1 ½ cups All-purpose Flour Forms the structure of the cake.
  • 1 tsp Baking Powder Helps the cake rise.
  • ½ tsp Baking Soda Assists with leavening and helps with texture.
  • 1 cup Granulated Sugar Provides sweetness and balances tangy kefir.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • In a large bowl, whisk together the kefir, eggs, and melted butter or oil until well blended.
  • In another bowl, sift together the flour, baking powder, and baking soda.
  • Gently fold the dry ingredients into the wet ingredients until just combined; do not overmix.

Baking

  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool before serving.

Notes

For a gluten-free version, swap out the regular flour for a gluten-free blend. Optional: sprinkle powdered sugar on top before serving.
