Ingredients

  • 2 chicken sausages, sliced into coins
  • 1 large sweet potato, peeled and cubed
  • 1 small zucchini, halved and sliced
  • 1 cup broccoli florets

Seasoning and Dressings

  • 1 tablespoon olive oil For cooking
  • 1 tablespoon soy sauce or coconut aminos To taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • Optional: grated parmesan or nutritional yeast for garnish

Instructions
 

Preparation

  • Boil or microwave the sweet potato slices until just tender, then drain and set aside.
  • Heat olive oil in a skillet over medium-high heat.

Cooking

  • Add the chicken sausage and cook until browned and crispy, about 5 minutes.
  • Add broccoli, zucchini, and cooked sweet potatoes to the skillet, stirring to combine.
  • Season with soy sauce (or coconut aminos), garlic powder, black pepper, and smoked paprika. Stir well.
  • Continue cooking for 5 to 7 minutes until vegetables are tender-crisp and heated through.
  • Remove from heat, garnish if desired, and serve hot.

Notes

Store leftovers in the refrigerator for up to 3 days in an airtight container. For longer storage, freeze portions in freezer-safe containers for up to 2 months. Reheat thoroughly before serving. You can customize with favorite vegetables, serve with yogurt or sour cream, and adjust portions as needed.
